Monica Galetti has introduced her latest summer menus for Singapore Airlines. The guest chef’s limited-edition dishes are available in Suites, First Class and Business Class cabins on flights from London Heathrow, London Gatwick and Manchester until August 31.
Passengers can look forward to vibrant summer ingredients alongside Chef Galetti’s refined cooking style.
In Suites and First Class, the four-course gourmet menu starts with beetroot salmon gravadlax dressed with escabeche vegetables, followed by a creamy sweetcorn and miso soup with Parma ham and savoury miso popcorn.
For the main course, cornfed chicken breast in Madeira is served with caramelised onion puree. Then for dessert, strawberry fraisier and lime sherbet coulis is available.
In Business Class, passengers also start with the beetroot salmon gravadlax. That is followed by stonebass fillet with caramelised cauliflower purée and crispy capers.
To finish, a peach, ginger and lime parfait with white chocolate and pistachio crumble topped with a peach schnapps sauce rounds up the meal.
In Economy and Premium Economy Class passengers can enjoy an exclusive dessert designed by Chef Galetti for the airline. Inspired by Hokey Pokey, her favourite childhood treat in New Zealand, she has created a salted caramel and honeycomb pot for Economy Class and a salted caramel and honeycomb delice for Premium Economy Class.
