This spring Swiss International Air Lines (SWISS) will highlight the culinary heritage of the Alpine region of Bern in the latest edition of its ‘SWISS Taste of Switzerland’ programme.
Passengers in First and Business Class on Switzerland’s leading air carrier will be served creations by Michelin-starred chef Rolf Fuchs of the Panorama restaurant in Steffisburg.
Chef Fuchs, who has led the family-run Panorama restaurant for over 25 years, is known for an innovative culinary style that blends local Swiss ingredients with Asian flavours. His menus for SWISS incorporate yuzu, wakame seaweed and furikake seasoning.
“Starred chef Rolf Fuchs from Steffisburg playfully combines local ingredients with flavours from around the world,” said Heike Birlenbach, Chief Customer Officer at SWISS. “That is similar to air travel itself, which brings us closer to new cultures and impressions.”
For the inflight service, Fuchs adapted his menus to ensure they could be plated efficiently in the air by cabin crew while maintaining high quality.
“I hope our passengers will be able to taste our attention to detail,” Fuchs said of the collaboration.
First Class travellers can choose from starters such as poached Swiss alpine perch with wakame seaweed salad, or an onion and Chardonnay soup with scallops.
For the main course, options include veal picanha with pepper salsa and white asparagus, or pikeperch with saffron and lemon beurre blanc served with furikake basmati rice and teriyaki eggplant.
Dessert is a yogurt and pistachio slice accompanied by yuzu and strawberry sauce and pistachio ice cream.
In Business Class, the menu opens with lemongrass and ginger shrimp served with fennel salad and dill cream.
Main courses include veal brasato with malfatti, spinach and ricotta, or a butter chicken with roasted cashew nuts and Asian vegetables and dessert features a basil cream tartlet with yuzu yogurt ganache.
Travellers in Premium Economy will also receive a three-course menu inspired by the Canton of Bern. The meal features a beef ragout with red wine sauce and polenta, followed by a regional cheese selection including Schönried mountain cheese and Blaue Aare. Dessert is a white and dark Toblerone mousse with strawberry compote.
Fuchs’s Panorama restaurant is situated in the Bernese Oberland overlooking Lake Thun. Passengers seated on the left hand side on flights to the US may be able to view the lake during their meal, depending on flight routes and weather.
