New SWISS menu hits the right notes

Dishes inspired by the cuisine of Canton Uri, in central Switzerland, will be served to First and Business class passengers on Swiss International Air Lines (SWISS) from March 5 as part of the SWISS Taste of Switzerland inflight culinary programme.

The programme has been operational for 22 years. Every three months, in collaboration with catering partner gategourmet, a new top chef is invited to create a varied selection of quality dishes from their ‘home’ canton to be served aboard SWISS’s long-haul flights from Switzerland.

Joshua Lüscher, chef de cuisine at Zwyssighaus restaurant in Bauen, has created the dishes from Canton Uri. On the shores of Lake Lucerne, the gourmet restaurant was the birthplace of Alberich Zwyssig, the composer of Switzerland’s national anthem.

“I’m truly delighted to have this unique opportunity to work with SWISS and bring a little piece of our Uri culinary culture to travelers from all over the world,” commented Lüscher, whose restaurant has 15 GaultMillau points.

First class passengers can dine on starters such as tartar of cured pikeperch and mustard pickles served with marinated white asparagus.

Main course options include a veal steak with herb butter jus and green pea and potato purée as well as goat meatballs and velouté with crayfish and clam sauce.

Passengers in First can round off their meal with a dulce de leche tartlet with poached pear.

Business class passengers can start their meals with a new take on vitello salmone with capers and toasted brioche.

Their main course options include braised beef shoulder and jus with morels, served with ribelmais polenta. Chicken breast with Casimir curry sauce is another option.

Lemon cake with mascarpone and verbena gel is a dessert option.

The three-course meal served in Premium Economy over the next three months is also inspired by Uri’s cuisine. Beef stew with red wine sauce and a fruity rhubarb tiramisu are among the menu options.

Julia Hillenbrand, Head of Brand Experience at SWISS, said: “Joshua Lüscher’s meals are a deft blend of traditional fare and contemporary flair, which sits excellently with who and what SWISS aspires to be. His creations surprise the senses and bring new life to the familiar aromas of the Uri region’s cuisine.”
