SWISS introduces cuisine from Canton Vaud

SWISS has rolled out Michelin-starred cuisine from Canton Vaud to passengers in First and Business class.

The new meals, which are the latest iteration of the airline’s ‘SWISS of Switzerland’ programme, have been crafted by top chef Frank Giovannini from Restaurant de l’Hôtel de Ville in Crissier, Canton Vaud. They will be served for next three months.

Passengers in First class can enjoy a starter of langoustine with tomato mousse and a veal filet mignon with conchiglioni pasta filled with aubergine caviar. 

Main meals in Business comprise beef tenderloin served with pesto polenta or a grilled chicken breast with gnocchetti di Zita pasta. 

Travellers can also opt for a gourmet-style classic Vaudios dessert, which is made up of an éclair with raspberries and caramelised pistachios.

The new three-course SWISS Premium Economy menu also draws inspiration from Canton Vaud. Highlights include local speciality cheeses, such as Gruyère and Bleu du Village, with a classic apricot tart.

Franck Giovannini added: “I’ve had the good fortune to cook alongside outstanding chefs such as Frédy Girardet, Philippe Rochat and Benoît Violier.
