SWISS debuts menu in First and Business

Premium travellers flying with SWISS will be the first to experience a new menu from Kempinski Palace Engelberg.

The new menu, which is part of the airline’s SWISS Taste of Switzerland programme, will be served on outbound long-haul services from Switzerland for the next three months.

Created by Kempinski Palace Engelberg’s Executive Chef Michéle Müller, the exclusive creations “reflect her international experience”, while also drawing inspiration from the five-star hotel’s menus. 

First class travellers can opt for salmon trout with beurre noisette & smoked almond cream, parsley potatoes and cauliflower. Meanwhile, passengers in Business class will be served beef tenderloin with za’atar spices and date jus, mashed potato & harissa, carrots and Romanesco.

Those in Premium Economy can opt for a three-course meal inspired by the Obwalden region, comprising marinated chicken with honey and a lentil ragout, Obwalden cheese and a chocolate gingerbread dessert with red wine pear compote.

Michéle works with surprising ingredients and interprets classic dishes with her own distinctive flair. Our passengers can look forward to some genuine culinary highlights from the Kempinski Palace Engelberg’s five-star kitchens.” 

“I spent several years cooking in the Middle East and my experiences there made a lasting impression on me. That’s why I like to develop my dishes with exotic spices that breathe new life into classic concoctions. And I’m honoured that I can now share my creations with SWISS’ passengers, too,” added Michéle Müller.
