Over the next six months, a special edition of the ‘SWISS Taste of Switzerland’ inflight culinary programme, created in collaboration with catering partner gategourmet, will serve flavours from all four of the country’s language regions on Swiss International Air Lines (SWISS) flights.
SWISS First and Business passengers will have the option of dining on gourmet meals created by some of Switzerland’s leading chefs. In December, the regions represented in the cabin classes will switch.
Until December, dishes by Olivier Jean, Executive Chef at Geneva’s The Woodward hotel, represent French-speaking Switzerland, whose dishes will be served in First class cabins. So too will cuisine representative of the Romansh-speaking region, with dishes created by Badrutt’s Palace hotel in St Moritz.
Passengers can look forward to lobster bisque, braised veal cheeks with Asian-style jus, Alpstein chicken breast with morel cream sauce or miso-marinated cod with baked polenta. Desserts are a Felchlin Maracaibo chocolate slice with Tahiti vanilla ice cream or cheesecake with a tropical fruit centre and sorbet.
Over the next three months, Business class travellers can look forward to dishes representative of Basel and Bellinzona. The dishes are the creations of Tanja Grandits, who operates the two-Michelin-starred restaurant Stucki in Basel, and Lorenzo Albrici.
Business passengers can anticipate Balik salmon with sweet potato and ginger relish, a corn-fed chicken ragout with red quinoa, and beef tenderloin with herb jus. Meals are rounded off with a caramelised chestnut mousse with raspberry and Gruyère cream or a lychee, black tea and rose slice.
Meals will be accompanied by wines and cheeses from the region concerned.
Premium Economy passengers can also look forward to a three-course meal inspired by Switzerland’s four language regions.
